I’ve seen images of pavlovas sprinkled across the internet and featured in glossy magazines over the years and always thought, “Wow, that is a beautiful dessert! Must be complicated to make…” So I would go on with my life, turning to my tried and true dessert recipes when I was in the mood for something sweet.

In the past year I’ve tried to be more adventurous with my baking and after a semi-success with our Nutella Brioche Swirls, my confidence was raised. Over the weekend I decided it was finally time to try the legendary pavlova – and guess what?! I was nervous for no reason! These mini pavlovas were a breeze to make.

If you are ready to impress your friends, or simply bring a gorgeous dessert to your next party follow the pavlova recipe below!

Summer Strawberry Pavlova

Ingredients:

  • 4 egg whites
  • 1 C. white sugar
  • 1 tsp vanilla extract
  • 1 C. whipped cream
  • 1 C. sliced strawberries

Recipe:

  • Preheat your oven to 300˙ and line a baking pan with parchment paper
  • Whip the egg whites until stiff peaks form
  • Gradually add the sugar, then gently fold in the vanilla extract
  • Spoon the mixture onto your baking pan and form fist sized circles
  • Place in the oven and bake for one hour
  • Let cool and serve topped with whipped cream and fresh strawberries

Tomorrow Ian and I celebrate our two-year wedding anniversary. Can you believe it?! Two years! It feels like yesterday I was walking down the aisle towards my best friend, but the calendar doesn’t lie – 730 days have since gone by.

To celebrate, I baked this mini floral cake! It’s easy to bake (shh, don’t tell anyone I used a box mix!), but the fresh floral decorations add an air of elegance. This cake would make a sweet addition to a birthday party treat table or in our case – an anniversary dinner!

To make this at home, just keep it simple! Divide a box cake mix into two greased mini cake tins. Bake according to the instructions and let cool. Layer vanilla frosting between tiers and decorate with fresh blooms.

There are hot summer days where I’m preparing for a party or fancy an evening dessert, but the idea of turning on the oven is off putting. In these instances, I’m all for a no-bake dessert! Luckily, this summer berry tart falls into that category.

With a pre-bought graham cracker crust and instant chocolate pudding, this mini dessert can be made in a matter of minutes. Add a sprinkle of powdered sugar and this berry tart is ready to awe your friends at your next dinner party. Side note: The color combination of the berries makes this easy dessert perfect for a Fourth of July celebration!

Ingredients:

  • 6 mini graham cracker pie crusts
  • 3.9 oz box of chocolate or vanilla pudding
  • 2 C. Milk
  • Berries
  • Powdered sugar

Recipe:

  • Whisk the pudding mix with the milk until smooth
  • Pour into the mini pie crusts and place in the fridge to set
  • Once the pudding has chilled, top with berries
  • Before serving, sprinkle with powdered sugar
