Almond Milk Chai Tea Latte

On days when Ian and I are itching to get out of the house, but have nowhere to go, we usually end up in a quaint coffee shop sipping on a latte plotting about our next adventure. Recently, my drink of choice has been a chai tea latte. Yes, I know. I’m super late to the party on this one! I’ve heard people raving about chai tea lattes over the years, and now I finally understand the hype.

My love for these lattes have become so strong I’ve discovered how to make them at home! My first attempt involved multiple bags of chai tea and hot almond milk…sadly it was a fail! Since then I have discovered the Tazo Chai Tea Concentrate and it has made all the difference!

Almond Milk Chai Tea Latte

Seriously, the process is so simple I feel silly writing about it! All you need to do is mix equal parts concentrate with almond milk and heat on the stove or microwave. To add that foamy texture you get at a coffee shop, I whip my warm drink in a blender (I don’t own a fancy frother!) for a few seconds before I pour it into my cup. It’s a delicious way to start your day!

Nestled in Edinburgh’s Grassmarket, Mary’s Milk Bar is a quaint café known for their frozen hot chocolate. When Ian and I were visiting his family in Scotland this summer, I popped in the café to see if this drink held up to all the hype – and if this post is any indication – it did!

Frozen Hot Chocolate

Frozen hot chocolate is an interesting concept, since it combines opposites. Cold ice cream with piping hot chocolate. Crazy? Maybe, but it is delicious! You just have to make sure to enjoy it soon after the ice cream is added, otherwise you are left with a lukewarm drink.

Today I’m taking an adult spin on frozen hot chocolate and adding a shot of baileys. However, this is just as delicious non-alcoholic. Enjoy!

Frozen Baileys Hot Chocolate

Ingredients:

  • Coffee flavored ice cream
  • Hot chocolate mix
  • Milk
  • Baileys

Directions:

  1. Make hot chocolate according to packet instructions
  2. Add one shot of baileys to the hot chocolate and stir
  3. Place one scoop of coffee ice cream into the hot chocolate
  4. Serve immediately

 

Homemade Marshmallows

When I was young winter was magical. As soon as a big snow storm came through town we would sit in front of the tv with our fingers crossed that our school would be appear on the snow day list. In the event school was called off, the neighbor kids would come over to build forts in our front yard.

After a few hours outside we would waddle into the house rosy cheeked and numb from the cold, ready to warm up with a cup of my mom’s famous hot chocolate. I alway took mine piled high with mini marshmallows.

While I no longer spend an afternoon out building forts in the snow, I still enjoy cozying up on the couch after a long day with a cup of hot chocolate. This year I decided to skip the mini marshmallows and try making this marshmallow recipe  at home. Once they set I used a star cookie cutter to make these cut out marshmallows.
