Our local chocolate shop makes the best chocolate covered mint Oreos. They are quite addicting, so Ian and I only allow ourselves to buy them around special occasions. With St. Patrick’s Day right around the corner (tomorrow!!) I thought it was a good excuse to buy the fixings and try to make these at home!

Surprisingly, making these chocolate covered mint Oreos went smoothly! I melted a bar of baking chocolate, submerged each Oreo, place them to dry on parchment paper and added a few shamrock sprinkles.

Since neither Ian nor I can afford to spend anymore time at the gym running these chocolate creations off, I thought I would surprise my co-workers with a plate of them tomorrow. I love how gourmet they appear when in reality they only took a few minutes to make!

Cuban Sandwich

On our flight home from our honeymoon Ian and I watched The Chef. It was a light-hearted movie that helped pass the time and left us craving a cuban sandwich.

Fast-forward to a few months later when we were out on a date and the menu listed a cuban sandwich. Ian and I had never tried one before, but after that in-flight movie we knew we had to add it to our order! Since that night Ian and I have fallen in love with cubans! The sweet barbeque sauce is offset with a slice of salty ham garnished with a tangy pickle.

Here is how you can make on of these delicious sandwiches at home:

  1. Butter two slices of thick cut bread
  2. On the opposite side of the bread spread yellow mustard
  3. Pile bbq pork onto one of the slices of bread, mustard side up (make it easy and buy this premade)
  4. Layer provolone cheese, a thick slice of cooked ham and two dill pickles on top
  5. Close the sandwich with the mustard side down
  6. Brown on a griddle or sandwich press

When I was young winter was magical. As soon as a big snow storm came through town we would sit in front of the tv with our fingers crossed that our school would be appear on the snow day list. In the event school was called off, the neighbor kids would come over to build forts in our front yard.

After a few hours outside we would waddle into the house rosy cheeked and numb from the cold, ready to warm up with a cup of my mom’s famous hot chocolate. I alway took mine piled high with mini marshmallows.

While I no longer spend an afternoon out building forts in the snow, I still enjoy cozying up on the couch after a long day with a cup of hot chocolate. This year I decided to skip the mini marshmallows and try making this marshmallow recipe  at home. Once they set I used a star cookie cutter to make these cut out marshmallows.
