There is a trendy restaurant downtown nestled between boutique shops that serves the best french fries. Tossed in truffle oil, the fries are served with a poached egg. The first time it arrived at our table I was a bit weary, an egg on french fries?! But I was a quick convert.

Now when Ian and I want to enjoy an indulgent meal at home, these specialty french fries usually make an appearance. I chose to swap out the truffle oil for dill this summer to add a level of freshness to the flavor combination. The result was drool-worthy.

Ingredients:

  • Shoe string french fries
  • 1 Tbs. dried dill
  • 1 Egg, poached

Recipe:

  • Bake the french fries according to package instructions
  • Transfer the french fries into a bowl and toss with dill
  • Plate and top with poached egg

Tomorrow Ian and I celebrate our two-year wedding anniversary. Can you believe it?! Two years! It feels like yesterday I was walking down the aisle towards my best friend, but the calendar doesn’t lie – 730 days have since gone by.

These past two years have been filled with many adventures (here too!), laughter, and trials. Through it all, I’ve felt blessed to have Ian by my side and I’m looking forward to what year three has in store for us!

To celebrate, I baked this mini floral cake! It’s easy to bake (shh, don’t tell anyone I used a box mix!), but the fresh floral decorations add an air of elegance. This cake would make a sweet addition to a birthday party treat table or in our case – an anniversary dinner!

To make this at home, just keep it simple! Divide a box cake mix into two greased mini cake tins. Bake according to the instructions and let cool. Layer vanilla frosting between tiers and decorate with fresh blooms.

When I was growing up I always thought we had a large garden. It spread the length of our backyard and was home to rhubarb, tomatoes, cucumbers, raspberries – the list could go on! After an afternoon playing out in the yard or swimming in the pool, my siblings and I would scavenge around in the garden for a quick snack.

Now that my siblings and I are all grown, you would think the family garden would scale back. Wrong. My parents have taken it to a whole new level and expanded the garden to triple it’s original size. While they sell produce at the farmers market, they still have an overflow of fruits and veggies. Luckily, that means I get to stock my fridge with fresh homegrown produce.

My last haul included a bag of strawberries. I ran through a list of recipes to use the strawberries and settled on these yogurt parfaits. They are quick and easy to assemble and make for a delicious mid-week breakfast.

Strawberry Compote Parfait

Ingredients:

  • 2 C. strawberries, slices
  • 2 Tbs. honey
  • 1 Tbs. lemon juice
  • Greek yogurt

Recipe:

  • In a sauce pan over medium heat, bring the strawberries, honey and lemon juice to a simmer.
  • Once bubbling, reduce the heat and use a wooden spoon to mash the strawberries.
  • Continue cook for 10 minutes, occasionally stirring
  • Remove from heat and let cool
  • In an airtight container, layer the strawberry compote under a dollop of greek yogurt.
  • Top with strawberry slices and a drizzle of honey.
  • Store in the fridge until ready to serve.
