Tomato Soup with Popcorn


Traditionally, the sidekick of tomato soup is grilled cheese. There is no denying this paring is delicious, but for the sake of spontaneity, I chose to try something different. Popcorn!


Maybe I’m late to the game, but this was my first time sprinkling popcorn over a warm bowl of soup. Note to newbies: you quickly need to savor the popcorn soup –  otherwise they disintegrated into a soggy mess (still delicious, though!)


Seeing as this was my first time trying this combination, I kept is simple. Tomato soup topped with Himalayan sea salt popcorn. Though, the possibilities are endless. Next on my list – jalapeno popcorn! Yum!

After an indulgent holiday season (a.k.a one too many Christmas cookies…) Ian and I dove into an eight week fitness challenge. Sadly, it runs over Valentine’s Day and the typical box of chocolates after a candlelight dinner will have to be skipped.

However, I read between the challenge guidelines and noticed that two things are approved in moderation – popcorn and dark chocolate. So I give you a health conscious Valentine’s Day dessert option – Dark Chocolate Sea Salt Popcorn! It’s the perfect combination, sweet and salty. Plus, you won’t have to feel guilty afterwards. I would say this is a major win, win!

  • 1/2 cup popcorn kernels
  • One bar of dark chocolate
  • Sea salt for sprinkling


  • Use an air popper to pop the popcorn into a bowl
  • Spread the popcorn into a thin layer on a cookie sheet
  • Melt the dark chocolate and drizzle over the popcorn
  • Quickly sprinkle sea salt over the popcorn before the chocolate hardens
  • Once the chocolate has hardened, break the popcorn apart and place in a bowl to enjoy

Fathers can be the hardest people to buy gifts for. Either their hobbies are too expensive for your price range, or they have a non-existent “wish-list” since they buy everything they want themselves.

Thankfully, food is always a welcomed gift. Given that November is my father’s birthday month, I recently had a brainstorm session to think up a creative gift for the man who has everything and wants nothing.

My father has a sweet spot for caramel corn, so I decided to take a modern spin on a classic treat – Bourbon Caramel Corn. While you might be concerned that the bourbon will be overpowering, I can assure you that the alcohol kick is boiled off and you are left with a subtle flavoring. Enjoy!

Bourbon Caramel Corn


  • 10 cups popped popcorn
  • 1 stick of butter
  • 1 cup brown sugar
  • 1 Tbs. corn syrup
  • 4 Tbs. bourbon
  • 1/2 tsp. salt
  • 1/4 tsp. baking soda


  • In a sauce pan combine the butter, corn syrup, sugar and salt and bring to a boil
  • Let boil and continue to stir for five minutes
  • Stir in the bourbon and baking soda. The caramel should get light and frothy
  • Immediately pour over popcorn and stir to coat
  • Spread caramel corn evenly over parchment paper and let cool
  • Break apart and store in an air tight container
