I never considered myself an early riser, but I’m a creature of habit. Even though my alarm is turned off on the weekends, I still wake up around the same time as a work-day. This has created a few hours of solitude in the morning as Ian has no trouble sleeping in!

I fill this time with bubble baths, diving into a book or spoiling Ian with a warm breakfast. Over the weekend I chose the latter and puttered around the kitchen testing out a new recipe – Pumpkin Spice French Toast! The spices are mild, but the warm flavors still come through with every bite.

Pumpkin Spice French Toast

Ingredients:

  • 2 eggs
  • ½ C. almond milk
  • 1 tsp. vanilla
  • ½ tsp. cinnamon
  • ½ tsp. pumpkin pie spice
  • 6 slices of bread

Directions:

  1. Whisk together the eggs, milk, vanilla and spices
  2. Pour into a shallow bowl and dip each slice of bread into the mixture until each side is evenly coated
  3. Place the bread on a heated skillet and cook for 2-3 minutes until the bread is golden brown
  4. Flip and cook the other side until golden brown
  5. Drizzle with maple syrup and enjoy!

French Toast with Raspberry Whipped Cream

During the week my breakfast consists of a bowl of cereal. Not that impressive, but I try to make up for my lack of variety over the weekend when I have more time to spare.

Last weekend I was craving french toast so I whipped up a batch. Normally I would just drizzle a bit of maple syrup on top and call it a day, but I felt a bit more adventurous this morning. I had leftover whipped cream in the fridge and I thought it would be a shame for it to go to waste. Right?!

A handful of raspberries later, I had a bowl of raspberry whipped cream. Pure heaven! Topped with fresh berries and a sprinkle of powdered sugar, I dug into my breakfast. French toast craving = satisfied!

Raspberry Whipped Cream French Toast

Ingredients:

  • Thick cut bread
  • 1/4 C milk
  • 1 egg
  • 1 C heavy whipping cream
  • 4 Tbs powdered sugar
  • 1/2 C raspberries

Recipe:

  • Whisk the egg and milk in a shallow bowl until well combined
  • Dip the bread into the milk/egg mixture, making sure each side is evenly coated
  • Place on a hot skillet and cook until each side is golden
  • Whip the heavy whipping cream and powdered sugar until stiff peaks form
  • Gently crush the raspberries and fold them into the whipped cream
  • Plate the french toast and top with whipped cream
  • Sprinkle on a handful of fresh berries and powdered sugar if desired

Goodness! That title is a mouth-full! But doesn’t it make you want to have breakfast for dinner tonight?! I might stray from our weekly meal plan and make a batch of these myself!

I got the idea for this stuffed french toast recipe when Ian and I were out for brunch at The Creamery. They have their own spin on stuffed french toast, but I wasn’t a huge fan of the cream cheese filling. As any foodie would do, I took the parts of the dish that I loved and combined them with new flavors. In this case, it was swapping out the cream cheese filling with a light maple bourbon whipped cream. The result was drool-worthy!

Feel free to mix and match flavors and have fun with this recipe. Don’t like sautéed apples? Throw on a handful of fresh berries! Love cream cheese? Then forgo the whipped cream. Cinnamon Raisin Stuffed French Toast with Maple Bourbon Whipped Cream

Ingredients:

  • Cinnamon raisin bread
  • 1 C. Heavy whipping cream
  • 1/4 C. Milk
  • 1 egg
  • 1 thinly sliced apple
  • 4 Tbs. Powdered sugar
  • 3 Tbs. Bourbon
  • 2 Tbs. Maple Syrup
  • Caramel sauce
  • Sprinkle of ground cinnamon
  • 1/2 Tbs. Butter

Recipe:

  • Whisk the milk and egg until blended
  • Dip the cinnamon raisin bread into the mixture and place on a heated skillet
  • Cook on each side until golden brown
  • In a separate pan, add the butter, apples, and cinnamon. Sautéed the apples until they are soft
  • In a mixing bowl, add the heavy cream, powdered sugar, maple syrup and bourbon. Whip until stiff peaks form
  • On a plate, top one slice of french toast with whipped cream and apples. Top with the other slice of french toast and add a dollop of whipped cream, two apple slices, and drizzle with caramel sauce. Enjoy!
