Cake pops were all the rage this year! So what better way to ring in 2016 than with Champagne Cake Pop Bites?! These fall into one of my favorite categories – bake goods that look fancy, but are simple to make!

Champagne Cake Pop Bites

So set a few minutes aside and whip up a batch of these gourmet cake pop bites to bring to a New Year’s Eve Party and wait for the compliments to flood in! Trust me, there won’t be one person who will be able to pass up these sweet treats!

Champagne Cake Pop Bites

Ingredients:

  • 1 box White Cake Mix
  • Eggs according to box
  • Oil according to box
  • Champagne (replace for water)
  • 1 16oz can white frosting
  • White Chocolate Candy Melts
  • Sprinkles (optional)

Directions

  • Make the white cake mix according to the instructions on the box. *Replace the measurement of water with champagne
  • Let baked cake cool for 30 minutes
  • Break the cake apart into tiny crumbs
  • Stir in the can of white frosting into the cake crumbs
  • Roll cake mixture into 1 inch balls and place on a non-stick surface before placing in the fridge to cool for 30+ minutes
  • Melt the white chocolate candy melts in the microwave
  • Roll the cake balls in the white chocolate until they are covered in a thin layer
  • Place on a non-stick surface and dust with sprinkles
  • Let the white chocolate harden before serving

Be still my heart! Have you seen anything this cute?! Now I may be partial to these Thanksgiving desserts because I love all things miniature, but I don’t think I’m in the minority here!

Besides being cute, these mini pies are actually quite practical. After a filling Thanksgiving dinner it is nice to have the option of a petit dessert. It allows guests to customize their portion by savoring one pie or indulging in a few!

Mini Pumpkin Pies

To make these little creations I used a drinking glass to cut out circles from pre-made pie crust. Press the circles of dough into a muffin pan and spoon in pumpkin pie filling. Cut out mini hearts from the pie crust dough and place on top of each pie. Bake in the oven at 350˙ for 15 minutes.

With the onset of autumn I get a craving for everything and anything pumpkin. With a can of pumpkin puree and a few shakes of pumpkin spice, you can transform a traditional snickerdoodle recipe into a seasonal treat. Cut down on the cookie rolling time and ask your significant other or children to help out! This was a real hit in our house. Just make sure everyone has clean hands!

*Tip: Stir in 1/2 cup pumpkin puree in your cookie dough mixture. Also swap out the cinnamon for pumpkin spice.
