With the leaves changing color and a hint of chill in the air, I’ve added a cup of coffee to my breakfast routine. Cradling the warm mug in my hand, I go about getting ready for the day. Surprisingly, this small adjustment leaves me feeling pampered in the morning.

While most days I stick with a simple black cup of coffee, there are those occasional mornings where I would rather stay snuggled under the covers than face the day. For those groggy mornings, I wondered how I could tempt myself to roll out of bed. After mulling it over I came up with the perfect addition — maple whipped cream!

Who wouldn’t want to crawl out of bed for this?! Placed on top of pipping hot coffee, the whipped cream melts into a delicious layer of foam that is sure to start your day with a smile.

Ingredients:

  • 1 C. heavy whipping cream
  • 4 Tbs. maple syrup

Directions:

  • Place the heavy whipping cream and maple syrup in a bowl
  • Whisk until soft peaks form
  • Can be stored in the refrigerator for up to 10 hours

In the past year I’ve tried to be more adventurous with my baking and after a semi-success with our Nutella Brioche Swirls, my confidence was raised. Over the weekend I decided it was finally time to try the legendary pavlova – and guess what?! I was nervous for no reason! These mini pavlovas were a breeze to make.

If you are ready to impress your friends, or simply bring a gorgeous dessert to your next party follow the pavlova recipe below!

Summer Strawberry Pavlova

Ingredients:

  • 4 egg whites
  • 1 C. white sugar
  • 1 tsp vanilla extract
  • 1 C. whipped cream
  • 1 C. sliced strawberries

Recipe:

  • Preheat your oven to 300˙ and line a baking pan with parchment paper
  • Whip the egg whites until stiff peaks form
  • Gradually add the sugar, then gently fold in the vanilla extract
  • Spoon the mixture onto your baking pan and form fist sized circles
  • Place in the oven and bake for one hour
  • Let cool and serve topped with whipped cream and fresh strawberries

 

 

French Toast with Raspberry Whipped Cream

During the week my breakfast consists of a bowl of cereal. Not that impressive, but I try to make up for my lack of variety over the weekend when I have more time to spare.

Last weekend I was craving french toast so I whipped up a batch. Normally I would just drizzle a bit of maple syrup on top and call it a day, but I felt a bit more adventurous this morning. I had leftover whipped cream in the fridge and I thought it would be a shame for it to go to waste. Right?!

A handful of raspberries later, I had a bowl of raspberry whipped cream. Pure heaven! Topped with fresh berries and a sprinkle of powdered sugar, I dug into my breakfast. French toast craving = satisfied!

Raspberry Whipped Cream French Toast

Ingredients:

  • Thick cut bread
  • 1/4 C milk
  • 1 egg
  • 1 C heavy whipping cream
  • 4 Tbs powdered sugar
  • 1/2 C raspberries

Recipe:

  • Whisk the egg and milk in a shallow bowl until well combined
  • Dip the bread into the milk/egg mixture, making sure each side is evenly coated
  • Place on a hot skillet and cook until each side is golden
  • Whip the heavy whipping cream and powdered sugar until stiff peaks form
  • Gently crush the raspberries and fold them into the whipped cream
  • Plate the french toast and top with whipped cream
  • Sprinkle on a handful of fresh berries and powdered sugar if desired
