I admit, summer has made me berry obsessed. With farmer’s markets and grocery stores overflowing with seasonal produce, I’ve been tempted to try new recipes and incorporate berries into as many things as I can. While berry bruschetta is not new to the foodie scene, this was my first taste of a nontraditional bruschetta!

On their own, I like everything in this recipe. Therefore, I was surprised that I was hesitant to take the first bite. Any doubt I had quickly vanished once I tried the berry bruschetta and I soon was reaching for another piece. The flavors are light and fresh, perfect for a summer picnic or backyard BBQ. If you are looking for something to satisfy your chocolate cravings, this recipe can easily be modified by swapping out the Greek yogurt spread with Nutella!

Ingredients:

  • French baguette
  • 1 C. plain Greek yogurt
  • 3 Tbs. honey
  • 2 C. fresh berries (strawberries, blueberries, raspberries, etc)

Directions:

  • Preheat oven to 400˚
  • Slice baguette into 1/2 inch thick slices and lay onto a backing sheet
  • Place in the oven on the top rack and toast for 5 minutes then remove and let cool
  • Mix the Greek yogurt with honey and spread a thin layer on top of each piece of toast
  • Top with berries and add a drizzle of honey before serving

I’m always up for a delicious salad, but at the end of the day, I often realize I didn’t eat enough veggies. In an effort to sneak more greens into my diet I wanted to make a healthy snack I could pack in my lunch.

As I brainstormed on what I could make that was loaded in veggies AND was delicious enough to make me excited to eat it – I came up with chickpea salsa! I was confident there would be loads of recipes on Pinterest, but as I scrolled around I realized I was wrong. So I hit the grocery store without a recipe and decided to wing it. And guess what?! It turned out to be an instant hit!

The fresh flavors combine to make an energizing snack that is perfect to pack in your lunch or serve at your next party! Plus, if you are like me and want to increase your veggie consumption you can’t go wrong with this delicious salsa!

Chickpea Salsa

Ingredients:

  • 2 Roma tomatoes
  • 1 green pepper
  • ½ onion
  • ½ cucumber
  • 1 Tbs. olive oil
  • 1 garlic clove, minced
  • 15 oz. can of chickpeas, rinsed
  • ½ tsp. dill
  • Salt and pepper to taste

Directions:

  • Chop the tomatoes, green pepper, onion and cucumber into bite-sized pieces and place into a bowl
  • Add in the chickpeas, garlic and dill
  • Mix until well combined and season with salt and pepper

There is a trendy restaurant downtown nestled between boutique shops that serves the best french fries. Tossed in truffle oil, the fries are served with a poached egg. The first time it arrived at our table I was a bit weary, an egg on french fries?! But I was a quick convert.

Now when Ian and I want to enjoy an indulgent meal at home, these specialty french fries usually make an appearance. I chose to swap out the truffle oil for dill this summer to add a level of freshness to the flavor combination. The result was drool-worthy.

Ingredients:

  • Shoe string french fries
  • 1 Tbs. dried dill
  • 1 Egg, poached

Recipe:

  • Bake the french fries according to package instructions
  • Transfer the french fries into a bowl and toss with dill
  • Plate and top with poached egg
