It’s no surprise I bake a lot around here so one would assume I would be able to bake a batch of chocolate chip cookies. Easy peasy, right?! Wrong. Each batch is lacking a certain element, whether that’s flavor or texture.

Then I saw these Whole Wheat Oatmeal Chocolate Chip Cookies from Two Peas and Their Pod. My first observation was how drool-worthy they were, then realized they leaned on the “healthy” side! Score!

With my fingers crossed I whipped up a batch. The oven timer went off and I held my breath as I pulled out the cookie trays. To my surprise they looked perfect! Before I got my hopes up I called Ian into the kitchen for a taste-test – and they passed!

Nutella Stuffed Puffles

Yes, you read that right. These delicious pastry/waffle hybrids are called PUFFLES! I don’t know if I was more excited over their name or the fact that I finally got to pull out the waffle iron Ian and I received for our wedding.

To make these little creations, you simply need to roll out a pre-make pastry and bush on Nutella, fold in half to seal in the filling, cut into squares and pinch the edges shut. Then you pop them into your waffle iron and let them cook.

Once they are ready you will have a golden, crispy waffle filled with warm Nutella. Sounds like a dream, right? I chose to serve them with fresh strawberries and a sprinkle of powdered sugar. YUM!

I am not a huge soup fan, but Ian and I recently found this creamy tomato bisque at Costco that I actually enjoy! It is a quick dinner to have on hand and after reading this article on the benefits of tomatoes, I don’t feel too guilty pouring myself a bowl.

Ian had a laugh when I toasted a slice of bread and used a star cookie cutter to make these little star croutons, but he didn’t protest when I added a few to his bowl! They added a bit of crunch to the soup and provided a cute Instagram photo-op.
