Mini Gingerbread Cookies

Mini Gingerbread Cookies

We have finally made it to December and I couldn’t be more excited to get into the festive mood! As soon as there is a slight chill in the air I am itching to get out my holiday decorations, but Ian and I reached a compromise and decided to wait until after Thanksgiving to break out the twinkle lights!

Mini Gingerbread Cookies

Along with Christmas baubles, sugar cookie candles, and garland; the smell of gingerbread puts me in a festive mood. I was toying with the idea of baking my own gingerbread house, but then I remembered I’m not Martha Stweart so I opted for these mini gingerbread cookies.

These mini gingerbread cookies are perfect to snack on with a cup of tea or for decorating your home! Just poke holes on the top of the cookies before baking and you can make a gingerbread garland!

Mini Pumpkin Pies

Be still my heart! Have you seen anything this cute?! Now I may be partial to these Thanksgiving desserts because I love all things miniature, but I don’t think I’m in the minority here!

Mini Pumpkin Pies

Besides being cute, these mini pies are actually quite practical. After a filling Thanksgiving dinner it is nice to have the option of a petit dessert. It allows guests to customize their portion by savoring one pie or indulging in a few!

To make these little creations I used a drinking glass to cut out circles from pre-made pie crust. Press the circles of dough into a muffin pan and spoon in pumpkin pie filling. Cut out mini hearts from the pie crust dough and place on top of each pie. Bake in the oven at 350˙ for 15 minutes.

Bourbon Caramel Corn

Bourbon Caramel Corn

Fathers can be the hardest people to buy gifts for. Either their hobbies are too expensive for your price range, or they have a non-existent “wish-list” since they buy everything they want themselves.

Thankfully, food is always a welcomed gift. Given that November is my father’s birthday month, I recently had a brainstorm session to think up a creative gift for the man who has everything and wants nothing.

Bourbon Caramel Corn

My father has a sweet spot for caramel corn, so I decided to take a modern spin on a classic treat – Bourbon Caramel Corn. While you might be concerned that the bourbon will be overpowering, I can assure you that the alcohol kick is boiled off and you are left with a subtle flavoring. Enjoy!
