Cake pops were all the rage this year! So what better way to ring in 2016 than with Champagne Cake Pop Bites?! These fall into one of my favorite categories – bake goods that look fancy, but are simple to make!

So set a few minutes aside and whip up a batch of these gourmet cake pop bites to bring to a New Year’s Eve Party and wait for the compliments to flood in! Trust me, there won’t be one person who will be able to pass up these sweet treats!

Champagne Cake Pop Bites

Ingredients:

  • 1 box White Cake Mix
  • Eggs according to box
  • Oil according to box
  • Champagne (replace for water)
  • 1 16oz can white frosting
  • White Chocolate Candy Melts
  • Sprinkles (optional)

Directions

  • Make the white cake mix according to the instructions on the box. *Replace the measurement of water with champagne
  • Let baked cake cool for 30 minutes
  • Break the cake apart into tiny crumbs
  • Stir in the can of white frosting into the cake crumbs
  • Roll cake mixture into 1 inch balls and place on a non-stick surface before placing in the fridge to cool for 30+ minutes
  • Melt the white chocolate candy melts in the microwave
  • Roll the cake balls in the white chocolate until they are covered in a thin layer
  • Place on a non-stick surface and dust with sprinkles
  • Let the white chocolate harden before serving

This may surprise many of you, but up until this week I had never tried eggnog! I had been hesitant to try this holiday drink since it contains raw eggs, but I took a little sip while I was whipping up a batch of these eggnog waffles. And guess what?! It wasn’t half bad! I don’t think I will be adding it as a Christmas Eve tradition, but I understand why people enjoy sipping on a warm cup of eggnog this time of year.

While you won’t find me giving a holiday toast with a cup of eggnog in hand, these waffles may make a yearly appearance. They are packed with the flavors of the season and are perfect for a holiday brunch. Also, with Christmas right around the corner, a surprise breakfast in bed is a sweet reminder of how caring you are…and may get you a little closer to that “dream” item on your wish list!

Snowflake Sugar Cookies

Baking sugar cookies are one of the most quintessential Christmas activities. Growing up we would huddle around the kitchen table with an array of colored frosting and decorate cutout sugar cookies. While our frosting skills needed improvement (I remember our tie-dye attempt failed miserably) we were always proud of our designs when we brought them to family Christmas parties.

To be quite honest, I had hoped that my frosting skills would have improved over the years, but it’s clear I still have a long way to go! Originally I had attempted to create an intricate snowflake frosting design, but quickly realized it was a bit too advanced. As many of my baking projects go, I resorted to using sprinkles to distract from my frosting mistakes.

The disappointment of my failed frosting attempts aside, these sugar cookies are a cute treat to bring to a Christmas party! Varying the size of the cookies allows people to savor one or leave room for other sweets.
