Once I can see my breath in the air when I step outside I know it’s cold season. To decrease my risk of catching the sniffles, I’ve been making this immune boosting juice. By taking one shot of this concoction in the morning, I’m able to kick my immune system into gear.

Now, I won’t lie. This juice packs a punch! The blend of tart lemons and the zing of ginger is mellowed down by sweet apple juice, but it definitely wakes you up in the morning! So you can set that coffee mug down and jump start your day with a shot of this juice!

Ingredients:

  • 2 apples
  • 2 lemons
  • 1 inch ginger, peeled
  • 1 pinch cayenne pepper

Directions:

  1. Wash produce and roughly chop up
  2. Place apples, lemons and ginger in a juicer and process
  3. Add a pinch of cayenne pepper into the juice and stir
  4. Pour into an airtight container and store in the fridge

After getting overexcited at an apple orchard a few weeks ago Ian and I came home with more apples than we knew what to do with! I made a few few batches of apple sauce, but our kitchen was still overflowing with produce. Cue recipe testing! There’s no better time to get creative in the kitchen than when you are drowning in apples! Right?!

I played around with apple crisp, muffins and overnight oatmeal. My favorite?! Well, I think the title of this post gives it away! The apple cinnamon overnight oatmeal blew me away. I kept checking my recipe notes to make sure this was actually a recipe suitable for breakfast rather than dessert! The blend of the tarte apples, cinnamon and maple syrup creates an indulgent breakfast that is ready to eat on busy mornings.

Ingredients:

  • 1 apple
  • 1.5 tsp cinnamon, divided
  • 2 Tbs maple syrup, divided
  • 1/2 C. rolled oats
  • 1/2 C. almond milk
  • 1/4 C. apple cider

Directions:

  1. Peel and core the apple. Cut into small cubes and place in a small frying pan.
  2. Add 1 Tbs of maple syrup to the pan and sprinkle 1/2 tsp of cinnamon over the apples. Simmer until apples are tender. Remove from heat.
  3. In a mason jar, add the oatmeal, cinnamon, maple syrup, apple cider and almond milk. Shake to combine and top with the sautéed apples. Seal the jar and place in fridge over night.
  4. In the morning stir the oats and enjoy!

October is in full swing and there’s no denying it – fall has arrived. While it’s bittersweet to pack away my sundresses and flip flops, there is an element of excitement with the change in season. Fall scarves, cozy boots and the infamous pumpkin spice latte are all perks of saying farewell to summer.

While baking these scones, the sweet smell of pumpkin spice enveloped our home and brought the festive spirit alive. Not soon after, I was rummaging around in our closet pulling out all of our fall decorations. It’s funny how the simple act of baking can lift your spirits and get you excited for the change in season (it’s no secret that I’ve been mourning the end of summer…)

Drizzled with cream cheese frosting, these pumpkin spice scones were the perfect way to welcome fall into our home. They are best enjoyed warm, right out of the oven, but if you wait to share them with coworkers I know they won’t mind!

Pumpkin Spice Scones with Cream Cheese Frosting

 

Ingredients:

Scones:

  • 2 C flour
  • 1 Tbs. baking powder
  • 1/3 C honey
  • 2 tsp cinnamon
  • ½ tsp ground ginger
  • 1/2 tsp nutmeg
  • ¼ tsp allspice
  • ½ tsp salt
  • 1/3 C coconut oil, solid
  • ¾ C pumpkin puree
  • 3 Tbs milk
  • 1 egg
  • 1 tsp vanilla extract

Frosting:

  • 4 oz cream cheese, softened
  • 2 C. powdered sugar
  • 2 tsp. vanilla exctract
  • pinch of salt

Directions:

  1. Preheat oven to 400˙
  2. Lightly grease scone pan, set aside
  3. In a mixing bowl, combine the dry ingredients. Add in the coconut oil and use a fork to mix it into the dry ingredients until it forms coarse crumbs
  4. Add in the wet and knead until well incorporated
  5. Spoon dough into scone mold and bake for 10-17 minutes or until golden
  6. While the scones cool, beat together the frosting ingredients until creamy. Refrigerate until ready to use
  7. When scones are cooled, drizzle the cream cheese frosting over the scones
