I have been on a health-kick lately, but a girl still has to enjoy her sweets! So I decided to compromise. I would be strong and pass the donuts at the market (they smelled SO good!) and go home to make these “lighter” baked donuts.

This was my first time baking donuts at home and I was surprised how well they turned out! I topped them with fresh berries, which basically makes them breakfast. Right?! Oh, a girl can dream.

Nutella Stuffed Puffles

Yes, you read that right. These delicious pastry/waffle hybrids are called PUFFLES! I don’t know if I was more excited over their name or the fact that I finally got to pull out the waffle iron Ian and I received for our wedding.

To make these little creations, you simply need to roll out a pre-make pastry and bush on Nutella, fold in half to seal in the filling, cut into squares and pinch the edges shut. Then you pop them into your waffle iron and let them cook.

Once they are ready you will have a golden, crispy waffle filled with warm Nutella. Sounds like a dream, right? I chose to serve them with fresh strawberries and a sprinkle of powdered sugar. YUM!

Lemon Poppyseed Scones

My mom and I have always been close, so it comes as now surprise that she bought me the perfect Christmas present – my first ever scone pan (and a few baking mixes to go along with it!) I had never made scones before, so the starter pack of mixes was perfect. Ian and I devoured the first batch of scones, so I hopped on Pinterest to find a lemon poppyseed scone recipe.

The other day I attempted to make them from scratch and was surprised that they turned out!
