Morel Mushroom Flatbread

Morel Mushroom Flatbread

My parents always knew the woods on our farm were home to morel mushrooms, but  we never went hunting for them. That is until my Dad found out a few family members and friends enjoyed them. Now he spends a few afternoons a summer scouring the ground to bring home a basket full of morels.

I was lucky to be home one weekend when my dad was harvesting the morel mushrooms and I was able to sneak away with a few. I had never cooked anything with morels before, but I thought they would make a delicious flatbread. And boy, did they ever!

This flatbread can be nibbled on as a light appetizer or be made into the star of the show as a delicious entrée. If morels are hard to come by, swap them out for your favorite type of mushroom. I’m sure the end result will be just as appetizing!

Quick and Easy Cheese Board

Quick and Easy Cheese Board! Perfect appetizer paired with wine for a fun girls night!

If you are from Wisconsin, you’ve experienced a wide range of cheese boards. Some are extravagant, featuring multiple types of cheese, sausage, fresh fruit, nuts and crackers. They are delicious, but often take a lot of time to put together and cost a pretty penny.

Quick and Easy Cheese Board! Perfect appetizer paired with wine for a fun girls night!

While large cheese boards make sense for the holidays or other family gatherings, a simplified version is perfect for cozy evenings at home. I pulled together this selection for a quick appetizer when dinner was taking longer than expected. With a glass of wine, this simple appetizer can turn an ordinary evening into a romantic date night at home.

All you need to recreate this appetizer is a nice block of cheese, fresh or dried fruit, crackers, and nuts. I chose a sharp cheddar, apple slices, grapes, pistachios, pita chips, and whole wheat crackers. Still think that is too much trouble? You never can go wrong with a slice of cheese and grapes! I don’t think you can get much simpler than that!

Avocado Bacon Crostini with Chili Infused Honey

Avocado Bacon Crostini with Chili Infused Honey. Perfect appetizer for a dinner party!

Ian has a sweet spot for a good cheese plate. When we were living in Madison we would wake up early on Saturday mornings to hit up the farmer’s market for a block of aged cheddar. For an easy appetizer, I would slice it up on a platter with grapes, apples, and crackers – it was always a big hit with Ian…and his roommates!

Boulder Locavore’s recipe is simple, but the result is a delicious honey with a subtle chili punch. Packaged with a mini honey dipper this would make a “sweet” hostess gift! (See what I did there?!)
