I’m always up for a delicious salad, but at the end of the day, I often realize I didn’t eat enough veggies. In an effort to sneak more greens into my diet I wanted to make a healthy snack I could pack in my lunch.

As I brainstormed on what I could make that was loaded in veggies AND was delicious enough to make me excited to eat it – I came up with chickpea salsa! I was confident there would be loads of recipes on Pinterest, but as I scrolled around I realized I was wrong. So I hit the grocery store without a recipe and decided to wing it. And guess what?! It turned out to be an instant hit!

The fresh flavors combine to make an energizing snack that is perfect to pack in your lunch or serve at your next party! Plus, if you are like me and want to increase your veggie consumption you can’t go wrong with this delicious salsa!

Chickpea Salsa

Ingredients:

  • 2 Roma tomatoes
  • 1 green pepper
  • ½ onion
  • ½ cucumber
  • 1 Tbs. olive oil
  • 1 garlic clove, minced
  • 15 oz. can of chickpeas, rinsed
  • ½ tsp. dill
  • Salt and pepper to taste

Directions:

  • Chop the tomatoes, green pepper, onion and cucumber into bite-sized pieces and place into a bowl
  • Add in the chickpeas, garlic and dill
  • Mix until well combined and season with salt and pepper

Daylights saving is rough. I love the extra evening sunshine, but losing an hour of sleep requires an adjustment period. Over the past week, I’ve tried to modify my nighttime routine to get a full eight hours of sleep, but much to my dismay I find myself lying wide awake in bed while the clock ticks away.

In elementary school St. Patrick’s Day was celebrated with green milk, shamrock sugar cookies and Rolos. While green milk is something I would like to stay in the past, I have tried to hold true to the tradition of creating festive treats for the holiday. As years have gone by, I’ve tested out Lucky Charm bars, Guinness Brownies and Irish cream cocktails.  This year, I chose to go out of my comfort zone and try something different – a mini tiered Whisky walnut cake!

To keep things simple, this recipe uses a boxed cake mix. After walnuts and coffee are folded into the batter, you won’t even recognize that this is a store bought mix! Topped with silky whisky buttercream, this St. Patrick’s Day inspired cake is sure to be an instant hit with friends and family!

Whisky Walnut Cake

Ingredients:

  • Betty Crocker chocolate cake mix
  • 1-1/3 C. strong coffee
  • 1/2 C. coconut oil, melted
  • 3 eggs
  • 1/2 C. walnuts, crushed

For the frosting:

  • 3 C. powdered sugar
  • 1/3 C. butter, softened
  • 1/2 tsp. vanilla
  • 2 Tbs. bourbon

Directions:

  • Preheat oven to 350 degrees and greese two round 6 inch cake pans.
  • Mix together cake mix, coffee, coconut oil, eggs and walnuts until well combined.
  • Pour equal amounts of cake batter into each pan. Bake for 20-25 minutes.
  • Set cakes aside to cool. Mix together frosting ingredients until buttercream is smooth. If texture is too thick, add a teaspoon of milk at a time until you reach your desired consistancy.
  • Frost cake as desired and enjoy!
