After dancing the night away at a wedding I woke up yesterday craving a simple, low-key breakfast. We have made a tradition out of leisurely eating pancakes on Sunday mornings, and I have fallen in love with this routine. However, I wasn’t in the mood to pull out the griddle and deal with all the clean-up. Therefore, I decided to take something simple, like toast, and spice it up with toppings to make this ordinary breakfast feel special.

Ian has a sweet spot for peanut butter so I chose to use that as my base. Topped with apple slices, a sprinkle of cinnamon, and drizzle of honey, a simple slice of toast was transformed into a delicious breakfast. It just goes to show that you don’t need to spend a lot of time in the kitchen to achieve a flavor-packed meal.

Ingredients:

  • 9-grain bread
  • Peanut butter
  • Apple slices
  • Cinnamon
  • Honey

Directions:

  • Toast two slices of bread and spread with peanut butter
  • Top with apple slices, a dash of cinnamon and drizzle of honey
  • Enjoy!

The importance of reading food labels isn’t a new topic. It’s always a good idea to be informed and know what you are putting into your body. Overall, I feel like I have a handle on what I put in my shopping cart, but last week I had a wake up call. I took the lazy route and placed a carton of strawberry Greek yogurt in my cart without reading the label. I mean, it had all the healthy buzz words on it – so it must be good for you. Right?! Oh, how wrong I was. I was blown away by the amount of sugar packed into one serving!

Luckily, it only takes a bit more effort to transform plain Greek yogurt into a delicious berry bowl. I admit, it’s not as simple as tearing off a yogurt lid, but in the end it’s significantly more delicious. Plus, with a few glass containers you can divide out single servings to grab and take with you to work. Just proof that homemade can still be convenient!

Ingredients:

  • 2/3 C. plain Greek yogurt
  • 1/4 C. granola
  • Handful of blueberries and strawberry slices
  • Drizzle of honey

Directions:

  • Add Greek yogurt in a bowl, top with granola, berries and a drizzle of honey
  • If preparing for the next morning, store the granola in a separate container.

Chocolate Covered Strawberry Angel Food Cupcakes

I celebrated my 27th birthday last week. Twenty-seven! It still feels weird to say that. In my head I will forever be 25. Anyone else like that? I thought by now, after getting married, paying taxes, etc. I would feel like an adult. That’s the funny thing about getting older I guess. You always think you are going to have it all figured out by a certain age, but one those milestone birthdays come and go you realize there is so much more in life to experience and learn.

To celebrate where I am in life now, I decided to treat myself to two of my favorite desserts – chocolate covered strawberries and angel food cake. I had never tried making angel food cupcakes before and was worried on how they would fare without being cooled upside down, but I was surprised on how well they turned out! Topped with a chocolate covered strawberry and a few fresh blooms, these cupcakes were the perfect birthday treat.

Ingredients:

  • Angel Food Cake Mix
  • Vanilla Frosting
  • Pink Food Coloring
  • Strawberries
  • One bar of dark chocolate
  • Fresh flowers optional

Directions:

  • Bake the angel food cupcakes according to the box instructions
  • While the cupcakes cool, make the chocolate covered strawberries
  • Once the cupcakes are cool, frost and top with a chocolate covered strawberry and flower buds
