When Ian and I got married I decided it was time to start filling our recipe box with tried and true favorites. I love scrolling through Pinterst and trying new recipes, but when I’m in a pinch I flip through our recipe box for a dish I know we will love. Sometimes you are just hungry and don’t want to take the risk of a #PinterestFail.

This pesto pasta dish was the result of a late night in the office and a nearly empty fridge. Ian and I were starving, so I knew I had to make something quick. I looked around the pantry and I noticed we had a package of quinoa noodles. Alright – now were are getting somewhere! Add the leftover pesto, peas, tomatoes, and turkey sausage lying around in the fridge and dinner was served! We were both surprised that it was A) edible and B) one of our new favorite dishes!

Pesto Pasta with Turkey Sausage and Peas

Ingredients:

  • 8oz of your favorite pasta (I used Trader Joe’s brown rice quinoa fusilli pasta)
  • Turkey sausage, sliced
  • 1 C. pesto
  • 1 C. frozen peas
  • 1/2 C. sliced grape tomatoes
  • Feta cheese

Recipe:

  • Boil pasta and add the frozen peas in during the last five minutes
  • While the pasta boils, pan fry the turkey sausage until golden on each side
  • Drain the pasta and place in a large bowl
  • Add the turkey sausage, tomatoes, and pesto
  • Stir until combined
  • Plate and sprinkle with feta cheese

It’s hard to believe I ate my first Croque Madame sitting outside the Centre Pompidou in Paris – eight years ago. EIGHT YEARS! Goodness, time really does fly.

The French are known for their refined pallets and delicious dishes so it’s no wonder that this sandwich can pack so much flavor. Best part?! This simplified version can be made in less than 10 minutes. Yup, you really can have it all! A delicious lunch when you are in a time crunch! (Yup, that definitely sounded better in my head…)

Now, you can spend a few more minutes in the kitchen and prepare the traditional Croque Madame, but here is how you can make this simplified version at home!

Croque Madame

Ingredients:

  • 2 slices thick cut bread
  • 3 slices deli ham
  • 1 slice Gruyère cheese
  • 1 over-easy egg
  • Butter

Recipe:

  • Spread and even layer of butter on two slices of bread
  • Fill the bread with cheese and ham
  • Grill in a skillet until golden brown
  • Top with egg and enjoy
  • *Optional: Garnish with fresh chopped chives

In the wintertime, soup is my go-to lunch option. It is quick and easy (score!) and warms you up from the inside out. I fell in love with Costco’s Organic Tomato Soup last year, but my sister introduced me to an amazing Pinterest find last time I was home – butternut squash soup!

I love things with a bit of spice, so the curry powder in this soup recipe was a pleasant surprise! When I made the soup at home myself, I added a teaspoon of cayenne pepper to give it an additional kick. However, this can easily be skipped over if you are not a fan of spicy food.

As the recipe suggested, I topped my soup with pumpkin seeds and added my own twist with a sprinkle of fresh chives. Feel free to get creative and add a bit of crumbled bacon, shredded cheese, or homemade croutons!
