On a hot summer’s day there is nothing better than a light spinach salad and cold glass of lemonade. This spinach salad has been a weekly dish in our house. You can whip in up in the matter of minutes, and it is a fun excuse to attend local farmer’s markets to pick up fresh produce.
Salad:
Mix washed spinach in a large bowl with sliced strawberries, mandrin oranges, feta, and candies pecans.
Drizzle with a lemon poppy seed dressing.

Ian and I have been making frequent trips back home for wedding planning meetings. On our most recent trip we stopped by Indian Lake for a quick hike (it ended up taking 2 hours). The hike takes you through a gorgeous meadow surrounding the lake and winds up into the woods. It’ a great way to enjoy the nice weather and sneak in a weekend workout.
